CHICKEN LABABDAR

          It’s a chicken prepared in brown gravy Indian style. LABABDAR means TASTY in urdu. It gets its taste especially from fresh cream and cashew paste. Best taste you can get from boneless chicken breasts or else you can use chicken with bone also.
CHICKEN LABABDAR

INGREDIENT
Chicken boneless cubes               500 Gms
Refined oil                                       30 ml
Ginger garlic paste                         1 tbsp
Cumin seeds                                   1 tsp
Onion brown paste                         100 Gms
Tomato purees                               100 ml
Chili powder                                    1 tsp
Garam masala                                1 tsp
Cumin Pd                                         ½ tsp
Coriander Pd                                   1 tbsp
Kasuri methi                                    ¼ tsp
Butter (cooking)                               30 gm
Fresh cream                                    50 ml
Broken cashew paste                    30 gm
Salt                                                   to taste

GARNISH

Chopped coriander (fresh)
Shredded ginger
Sliced tomato
         
METHOD OF PREPARATION

1.   Heat oil in a pan. Sauté cumin and ginger garlic paste. Then add brown onion paste sauté for 2 minutes then add the cumin powder, red chili powder, coriander pd,garam masala, and kasuri methi.
2.    Add tomato puree and cook till oil leaves on top.
3.   Stir in the chicken. After chicken cooked 3/4th add broken cashew paste and some stock or hot water as available.
4.   Cook over a low flame for 5-10 minutes. Pour the butter and cream over the top. Cook for 1-2 minutes.
5.   Garnish with shredded ginger, chopped coriander and sliced tomato. Serve hot.
