COCONUT RICE

          It’s actually a south Indian delicacy. Flavoured rice you can find in any many form. Coconut rice is flavoured rice which is having lot of tampering goes well with sambar and gravy themed curries.
COCONUT RICE

INGREDIENT
Basmati rice                                                  400 Gms
Coconut, freshly grated                              100 Gms
Desi ghee/Butter                                          40 ml
Roasted chana dal                                      20 Gms
Peanut washed, crushed               20 Gms
Red chilley whole                                        3 nos
Curry leaves                                                 5-7 nos
Asafoetida                                                     a pinch
Salt                                                                 to taste

METHOD OF PREPARATION

1.    Steam the rice and keep aside.
2.    Shallow fry coconut evenly to a golden colour on a slow fire.
3.    Sauté  the peanuts and remove(you can use cashew nuts also, but to give it south flavour I added peanut)
4.    Sauté the broken pieces of dry chillies, roasted chana dal, and curry leave well.
5.    Mix rice, coconut, nuts, remaining of ghee and salt.

6.    Serve hot.
