Fried Fish with Hollandaise Sauce

Fried Fish with Hollandaise Sauce

Ingredients
Sole or plaice fillet       600 gm
 Plain flour                      30 gm
Salt                                to taste
Black pepper crushed 1 tsp
Olive oil                         15 ml
Butter                            30 ml
Hollandaise sauce               250 ml
Lemon juice                  15 ml
Parsley chopped          to garnish
Method of preparation
Dip the fish in seasoned flour.  Shake off any excess. Heat the oil in a frying pan, add the butter.  Cook each fillet for 2-3 minutes on each side or until golden brown. Add the hollandaise sauce and lemon juice.  Simmer for 2-3 minutes.  Garnish and serve with potatoes and green vegetables.
