JALEBI

CHEF BB
            It’s a famous Indian dessert. It’s a Very famous in Indian festival or any other occasions. Goes well warm with rabri another sweet made of milk actually concentrated milk.
JALEBI
INGREDIENT
Refined flour               500 gm
Sugar                           750 Gms (in 1.5 string syrup)
Curd                            50 ml
Meetha soda               a pinch
Jalebi colour                a pinch

MISE EN PLACE
            Before 12 hour of making jalebi mix refined flour, curd and meetha soda and keep it for fermentation. Make 1.5 string sugar syrup.(add little amount of water in sugar keep it boil after boiling add 1 tbsp milk with 1tbsp water to get a clean the syrup and take out the foam after it fully stiffen). If you take some syrup in between your 2 finger if it is making small wires then syrup is ok for jalebi making.
METHOD
            Heat as required refined oil in jalebi kadhai. Take a small piece of cloth which has a small enough whole in its centre (this type of cloth only meant for making Jalebi). Add jalebi colour to the mixture before prepared. Mix it well. Fill it half in the cloth slowly and regularly press the cloth to make round shape Jalebi. Deep fry it till golden brown in colour. Add deep fried Jalebi to the syrup soak it until it soaks enough syrup in to it. (While soaking syrup should be Luke warm.
            Serve it luke warm or chill. Goes well with rabri.
