KESHAR KHEER

CHEF BB


          It’s a Indian dessert prepared from rice and milk especially called as kheer. I mixed some amount of kesar(saffron) in it to give it colour , texture and flavor. Sugar buddies can have it or else you can add sugar free also to control your sugar dietery and taste the delicacy also.
KESHAR KHEER

INGREDIENTS
Long grain rice (basmati)                         100 gm
Sugar                                                         100 gm
Saffron (keas) water                                2 tbsp
Milk                                                             1 litre
Ghee                                                                   3 tsp
Cloves                                                       2 no
Cardamoms (green)                                 2 no
Cinnamon                                                 1 no
Almonds (boiled and chopped)              1 tbsp
Raisins                                                      ½ tbsp
Cashew nuts, chopped                                     1 tbsp
Pistachio, cleaned and chopped            1 tbsp
Khowa                                                       50 gm

METHOD OF PREPARATION
          Wash the rice and drain and keep it aside. Soak the saffron in warm milk and keep aside. Blanch and slice the almonds, slice the pista and break the cashew nuts into small pieces. Clean the raisins if necessary. Heat the ghee in a cooker and add the raisins and cashew nuts. Fry until golden, remove and set aside. Add the rice and the whole spices to the cooker and fry for 1 minute. Add the milk, saffron soaked in warm milk and the water. Cook for a few minutes on moderate heat until the rice is done. Now add the sugar, and cook further on low heat until the sugar has blended and the mixture thickens. Then add Khowa 3/4th of dry fruits to it and cook it for another 2 mins. Serve chilled or hot as your serving preference and taste.

GARNISH
          Remaining dry fruits.
