PALAK KI KADHI

CHEF BB          Kadhi actually a delicious dish from Rajasthan but I have added palak (spinach) to it to give it a healthy boost. It’s a very tasty dish especially for spinach lovers.
PALAK KI KADHI
(Spinach in curd and Bengal gram)

INGREDIENT

Curd, dahi, whisked                        1 cup
Besan                                              2 tbsp
Spinach (palak), finely chopped   1 cup
Cumin seeds (jeera)                       ½ tsp
Onions, chopped                                      ¼ cup
Ginger-green chilli paste                1 tsp
Turmeric powder (haldi)                           ¼ tsp
Chilli powder                                    1 tsp
Oil                                                     ¼ cup
Salt                                                   to taste

METHOD OF PREPARATION

Mix the curds and gram flour in a deep bowl and whisk till the mixture is foamy. Keep it aside Heat the oil in a kadhai, add cumin seeds and let it crackle. Add the onions, curds-Bengal flour mixture, chilli powder, turmeric powder, ginger-green chilli paste and cook for 1 minute. Add the salt and allow it to boil, while stirring continously. Add the spinach, 1/2 cup water and cook for 3 to 4 minutes.
