CHICKEN SALAD



CHICKEN SALAD
INGREDIENT
200 grams                                           chicken breast
03 grams                                             whole spice
10 ml                                                   olive oil
05 grams                                             garlic, finely chopped
50 grams                                             egg yolks
250 ml                                                 salad oil
10 ml                                                   vinegar
05 gram                                              mustard powder
05 grams                                             sugar
10 grams                                             white pepper powder
05 grams                                             salt
10 ml                                                   lemon juice
50 ml                                                   cream
10 grams                                             parsley, fresh, chopped
50 grams                                             lettuce fresh
MOP
            Boil chicken breasts with whole spice and salt. While that time take egg yolk, mustard powder, white pepper powder and sugar in a clean, dry stainless steel bowl. Mix them with a wooden spatula until sugar dissolves fully. Add salad oil drop by drop. In between mix vinegar whenever it thickens to loosen it and give a pleasant white colour. Finish with lemon juice and salt. Keep it in refrigerator to chill. Mayonnaise sauce/dressing is ready.
            Take out the boiled chicken and cut into thin juliennes toss it with olive oil, salt and finely chopped garlic. Keep it aside to cool. Mix it with mayonnaise. Add cream and finely chopped parsley to enhance the taste. Serve it chill.
